[Science] Why isn't erythritol more popular?
I think because it doesn't taste as good as well. Malitol tastes just like sugar to me, I can't taste the difference--but erythritol has a slight cooling aftertastes. So not only are Malitol and co cheaper, they also taste more like the real thing, which matters when people are trying to sell to the masses. edit: ppl can stop replying saying how bad maltitol is, I am FULLY aware. OP asked why X isn't more popular, and I explained because it doesn't taste as good. And things tasting good is why a lot of people, myself included, got fat. A lot of people using sugar substitutes don't realize what GI is, nor fully grasp how similar to sugar maltitol is. More on reddit.com

Is erythritol 0 carb?

yep, you're good, 0 net carb.

Erythritol and stevia are hands down the best sweeteners to use if you ask me. I don't really touch the other stuff.

What is your experience with sugar alternatives such as erythritol or xylitol? Would you recommend or avoid them?
If you have a sensitive stomach, be careful. Those sugar alternatives can be rough on your digestion, and can create a laxative effect in some individuals. So proceed with caution, and see how you feel afterwards. More on reddit.com

Erythritol or stevia blends: how do they differ for baking?

Both can sweeten baked goods, but they’re used a bit differently.

  • Erythritol: Often sold granulated or powdered, it adds bulk that can support structure in cookies, muffins, and cakes.
  • Stevia or monk fruit blends: These high-intensity sweeteners are frequently blended with erythritol to deliver sugar-like texture and easier measuring.
  • Format matters: Choose granulated for batters and doughs, confectioners-style for frostings, and brown-style for recipes calling for brown sugar.

Results can vary by recipe, so start with small tests and adjust to taste. Checking the product description for usage cues like “baking,” “granulated,” or “confectioners” can help you pick the right fit.
