You can sub them for onions in anything you sauté onions down for, pretty much for sure. You can also make fried leek rings which are in my opinion better (but more laborious) than fried onion rings. More on reddit.com

Gratin is my favourite: https://www.greatbritishchefs.com/recipes/leek-gratin-recipe It works as a side dish but I happily have it as a main with just some green salad and a glass of wine on the side. For extra leeky flavour, infuse the milk for the bechamel ahead of time with any leek trimmings (i.e. the really fibrous green parts), then strain before use in the recipe.
