In the texts discussing the hunt for the Questing Beast, you get two main people hunting it. The first introduced are Pellinore and by extension his sons, the next is Palamedes. Which of these groups do you find more compelling in the Questing Beast hunt?
I have to go right out and say that the Pellinore connection never really seemed all that compelling, especially since his sons treat the whole thing as more of a distraction than anything else. Palamedes's pursuit of it, on the other hand, feels like it's in service to his character as someone with a huge chip on his shoulder and lets him show off some great determination. So I have to give the nod that Palamedes's side is more interesting, especially with the Post-Vulgate backstory of it being a revenge quest driven by guilt that he wasn't there when it killed off his brothers.

The Questing Beast is an enigmatic creature in the Arthurian mythos, with several animals possibly having taken that name with several different shapes and abilities. However, in the version inspired from the Prose Tristan, the Questing Beast is a symbol of sin. When a lady fell in love with a demon and accused her brother of raping her to cover up her pregnancy, she gave birth to a monster that made a noise akin to the pack of hounds that had used to execute her brother. The Questing Beast is chimeric monster with the head of a serpent, the body of a leopard, the tail of a lion, the feet of a deer, and the sound of dozens of questing hounds emanating from its belly. It is a nigh uncatchable being, with many knights trying and failing to kill it over time. Even the line of King Pellinore, though it tried to catch the beast, was entirely unable to put an end to it. It wasn’t until the Saracen Palamedes took up the hunt in revenge for the beast slaughtering his family that the Questing Beast finally met its end. Palamedes converted to Christianity and then allied with the Grail Knights Perceval and Galahad, and with their combined force of arms and newly renewed spirit, the Questing Beast was slain in a lake.
Note, other names for the Questing Beast include Barking Beast, Yelping Beast, Howling Beast, the name left as in the French so Beast Glatisant, Bizarre Beast, and various others. There are many other versions of this monster in Medieval literature, however this thread will be focused on versions derived from the Prose Tristan; that is to say, the Post-Vulgate and Perceforest. Though the Blatant Beast from the Faerie Queene is similar thematically, it lacks the chimeric traits and so will not be considered here.
Magical Powers
The Questing Beast’s demonic origin imbued it with wicked powers besides the constant barking of dogs in its belly, allowing it to destroy its foes more effectively.
In Perceforest, the Questing Beast’s neck emits a shimmering, mesmerizing light which can even make it invisible sometimes
This light mesmerizes animals of all kinds around the Questing Beast, luring them in to the degree that mortal enemies sit next to each other and even if they were attacked, they wouldn’t respond
The light also mesmerizes humans, a knight in this case being shown images of his love
This light spell is broken when the beast attacks. It is also noted that it would usually exhaust its prey to make this attack more effective but in this particular instance, it got gluttonous and jumped the gun on its attack hence why it didn’t kill this knight
Done with proper patience, the mesmerizing light lasts long enough that the Questing Beast kills a buck lured by it
This trick eventually kills Olofer, despite him having been warned in advance to watch out for such a thing
In the Post-Vulgate Grail Quest, the beast conjures a demonic man when wounded which grabs the lance used to wound it and proceeds to slaughter five knights with ease
The Beast lets out a terrible noise when wounded, which knocks the twelve knights hunting it unconscious and out of the saddle. During the period when they are unconscious, the demonic man from before presumably comes out and kills eleven of them with a lance, and near fatally wounds the twelvth
When mortally wounded, the Questing Beast dives under the waters of a lake and causes the lake to spew fire and shake violently for a while. Even after it subsides, the lake continues boiling perpetually
When it was born, it was so terrifying that it kills all the women in attendance with fear except for one of them and the mother. At birth it’s immediately capable of running too.
Physicals
The Questing Beast is formidably fast and strong as befits a monster. It is known for being practically impossible to catch in terms of its endurance and evasiveness.
The Questing Beast’s fangs snap a lance in half
It bites into a shield and survives a sword blow to the head, albeit it in combination with its fangs being broken makes it retreat
After being chased for a day by a knight on his horse, the Questing Beast is still going on “tirelessly” and outpaces him
It instantly kills a buck in its jaws and carries it off into the woods. Evidently its fangs also regrew at some point
The Questing Beast rips a man’s guts out quickly and tears him in half
The Questing Beast survives being stabbed in the thigh by a lance. This happens twice.
As per Perceval, it goes so fast that nothing could catch it
The Questing Beast kills twenty hunting dogs and a horse off-screen
Limits
With the aid of God after being baptized, Palamedes was able to kill the Questing Beast via finally running it to exhaustion along with Perceval, Galahad, and many hounds.
The Questing Beast does eventually tire after the constant hunting and harassment by Perceval, Palamedes, their swarm of hunting dogs, and all the others who have tried to chase it through its lifetime, and comes to a stop to drink water in a lake
Palamedes fatally wounds it via completely impaling it with his lance
